Experience this century old style of cooking by strategically layering vegetables and meats, creating a tender and flavorful dish, just like what's served in Marrakech. The tagine comes in two parts, with a small hole on top to allow air to circulate.

Please see details below on how to properly cure a terracotta tagine before you begin cooking.

1. Fully soak the tagine in water for at least 2 hours to overnight.

2. Dry the tagine and rub the interior, exterior and lid with olive oil.

3. Place in a cold oven and set temperature to 300°F, and leave for 2 hours.

4. After 2 hours, turn off oven and let the tagine cool inside.

5. When completely cool, wash in mild soapy water and dry with a clean cloth.

6. Lightly rub the interior, exterior and lid with olive oil before storing.

**Do not add cold food to a hot tagine, or vise versa. Never place a cold tagine in a hot oven and never place a hot tagine on a cold surface**
